Finding a voice

I think I am writing this blog as a record of a new life (and am quite unsure as to whether or not anyone will choose to read it), but here I am on a cold February day wondering what will happen next.  If I continue to write as the weeks go by maybe I will make some discoveries and find a voice in this crowded community which is the World Wide Web.

Today is a grandson’s birthday so we shall pay a visit.  As my daughter-in-law is from The Netherlands I will be taking an Ontbijtkoek with me.  This is a traditional breakfast cake which she mentioned last time we discussed Dutch baking.  This version has been put together from ingredients which I have to hand including spelt flour rather than the usual rye.

  • 100 g self raising flour
  •  200 g spelt flour
  • 2 tsp baking powder
  • 100 g soft brown sugar
  • 1/2 tsp cloves
  • 1/2 tsp cardamon
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • pinch salt
  • 100 g golden syrup
  • 100 g black treacle
  • 200 ml milk

Mix all the dry ingredients then stir in the syrup, treacle and milk. Pour the mixture into a lined 2 lb loaf tin and bake for 1 hour at 150 C.  It takes almost as long to read the list of ingredients as it does to prepare!  Just use a blend of spices to your taste.
